Raw Vegan Greek Yogurt: Groatgurt Anyone?

I seem to have a breakfast theme going on… Can you tell what my favorite meal of the day is? And, in my opinion, the most important.

Fueling right in the morning leads to a clear, focused mind and an energized body. If you feel like napping after any meal, you may need to begin looking at the quantity and quality of what you’re consuming. For breakfast, let’s toss those bagels and donuts aside and reach for some fermented (think probiotics) raw vegan greek yogurt to fuel our guts, brains, and bodies!


Raw Vegan Greek Yogurt

10 Minute Prep                   1 ingredient                    4 Servings

Ingredients:oat groats

1 cup oat groats (soaked for 8-12 hours)

1/4 – 1/2 cup water

Instructions:

Allow oat groats to soak overnight (8-12 hours), fully submerged in water. Strain.

Pour soaked, strained oat groats into a blender with 1/4 cup water. Begin on low then move to a high speed setting for 1-2 minutes until texture is very smooth. If contents will not blend, continue to add water, 1/8 cup at a time. The less water, the better!

Pour creamed oat groats into a glass or porcelain container. Cover with cheese cloth, mesh, or cloth napkin, allowing it to breath. Allow to ferment for 3 days. It’s best kept at room temperature, in a dark space.

After 3 days has passed…

TAH DAH!

Raw Vegan Greek Yogurt!

Top with seed mix (equal parts sesame, pumpkin, sunflower, and flax seed), chopped figs, or honey.

Benefits of Fermented Foods

Fermented foods, or lacto-fermented foods, have kept humans alive and well for years (think beer, kimchi, sauerkraut) and has allowed humans to preserve food supplies. During the lacto-fermentation process the natural bacteria feed on the sugar and starch in the foods, creating lactic acids which preserves the food. Our bodies use the probiotics created during lacto-fermentation to break down nutrients, aiding in assimilation, digestion, and elimination.
