The Granola’s Granola

Urban Dictionary, a site dedicated to providing explanations of slang words, defines being a “Granola” as an adjective used to describe people who are environmentally aware (flower child, tree-hugger), open-minded, left-winged, socially aware and active, queer or queer-positive, anti-oppressive/discriminatory (racial, sexual, gender, class, age, etc.) with an organic and natural emphasis on living, who will usually refrain from consuming or using anything containing animals and animal by-products (for health and/or environmental reasons), as well as limit consumption of what he or she does consume.

Well, I’m here to say, I’m a granola and proud of it! I’m also proud of my granola recipe that is nourishing and oh so delicious!


The Granola’s Granola

Makes 12 cups     Cook Time: 30 min     Prep time 10 min

What You’ll Need

  • Large mixing bowl
  • Microwavable bowl (or double boiler)
  • Two sheet pans

Ingredients

  • 5 cups rolled oats*
  • 1 cup unsweetened coconut flakes*
  • 1 cup pumpkin seeds*
  • 1 cup sunflower seeds*
  • 1 cup raisins*
  • ½ cup coconut oil*
  • ½ cup honey (maple syrup or agave works great too)*
  • ¼ cup sesame seeds*
  • ¼ cup flax-seed*
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp salt

*Use organic (if able)

Directions

  1. Preheat the oven to 325℉.
  2. In a double boiler or microwave, combine coconut oil and honey, heat until warm. Pour mixture into a large mixing bowl. Add salt and stir. Pour rolled oats, coconut flakes, pumpkin seeds, sunflower seeds, flax-seed, and sesame seeds into the bowl. Mix with clean hands or large wooden spoon. Spread the mixture onto two sheet pans. Dust cinnamon and nutmeg over the unbaked granola.
  3. Bake 20 minutes at 325℉. Remove from the oven and stir granola – this will evenly cook all pieces. Place back into the oven for another 10 minutes. Take out and allow to cool. Sprinkle raisins over cooled granola.
  4. Store in an airtight container for up to a month (I use 3 quart sized ball jars).
  5. Enjoy!
